He’s a talented chef with 20 years of experience in Michelin-starred Parisian restaurants and luxury hotel kitchens across Asia. He’s cooked at some of the world’s best restaurants - and now he’s cooking for you.

From Paris Michelin Kitchens to Bangkok

Chef Nicolas trained in Paris restaurants you’ve probably heard of: Alain Ducasse au Plaza Athénée and Ledoyen. Both have Michelin stars. Both are known for precise, classical French technique. 


Then he came to Asia. He worked at Le 39V in Hong Kong, Brasserie Palmier at Four Seasons Bangkok, and led the kitchen at Hotel Indigo Bangkok. Along the way he developed a speciality: seasonal menus that change with what’s fresh. 


You can see why he’s a natural fit for Cocotte. We’ve always focused on farm-to-table cooking - same philosophy, same commitment to seasonal ingredients. Chef Nicolas already knows this approach inside and out. Watch for the menu to evolve over the coming months.
